Barèges-Gavarnie lamb, which has a protected designation of origin (PDO), is characterized by its tender, flavorful meat, while Tarbais beans, also a PDO, are prized for their melt-in-the-mouth texture and go perfectly with dishes in sauce.
Black Bigorre pork is another local pride, known for its delicate flesh, often prepared as ham or sausage.
The Pyrenean tourteau, a fluffy cake, delights sweet tooths, as do the famous berlingots from Cauterets.
